I love Lemon Bars – always have. I have made them from scratch and from a box in the past, and will probably continue to do so in the future.
This recipe makes a very hearty bar. The lemon top is thick and does not have the gel like consistency you get from a box mix.
The crust is heavy and crunchy, but not in a bad way.
The dessert isn’t overly sweet, but isn’t overly acidic either.
It is a very balanced bar overall. And very tasty!
LEMON BUTTER SNOWBARS
CRUST
½ Cup Butter, Softened
1 1/3 Cups All Purpose Flour
¼ Cup Sugar
FILLING
2 Eggs
¾ Cup Sugar
2 Tablespoons All Purpose Flour
¼ Teaspoon Baking Powder
3 Tablespoons Lemon Juice
Confectioner’s Sugar
Preheat oven to 350 degrees In 1 ½ Quart mixer bowl combine crust ingredients. Mix on low speed until blended. Pat into ungreased 8 inch square baking dish. Bake for 15 to 20 minutes. Meanwhile, prepare filling. In 1 ½ quart bowl combine all filling ingredients. Blend well. Pour filling over partially baked hot crust. Return to oven for 18 to 20 minutes. Sprinkle with confectioners’ sugar. Cool before cutting.
