Wheat Flour and Wheat Germ, Sounds Good?

I was skeptical that this was going to be a good cake. I mean, wheat flour and wheat germ – in a cake! Um, no thank you. But, I made it anyway. I mean, how bad could it really be right?



I am so glad I took a chance on this recipe! So the cake turns out like a coffee cake. Why did we as a people stop eating coffee cake? I am an avid coffee lover, so I love a nice coffee cake to go with one of my many cups.



The batter is very dry, and honestly does not look like a cake batter. Once I turned it out into the pan, I had to press it down a bit. I really was nervous at this point, I mean it didn't look all that appealing!


The apples are moist and delicious. You can’t even taste the wheat! There is a full bodied nutty flavor. Even more than the walnuts, I do think ‘the wheat germ that is giving it that flavor.



I must admit, after I ate the first “tasting” slice, I found it difficult to not eat more. My husband experienced the same phenomenon this morning.



This is a definite must try!



BABE’S APPLE CAKE


2 Cups Whole Wheat Flour

¼ Cup Toasted Wheat Germ

2 Teaspoons Baking Soda

1 Teaspoon Cinnamon

1 Teaspoon Salt

½ Teaspoon Nutmeg

4 Cups Dice, Peeled Apples

1 Cup Granulated Sugar

1 Cup Packed Brown Sugar

½ Cup Oil

1 Cup Chopped Walnuts

2 Eggs, Well Beaten

1 Teaspoon Vanilla


Stir together flour, wheat germ, soda, cinnamon, salt and nutmeg; set aside. In a large bowl combine apples, sugars, oil, walnuts, eggs, and vanilla. Add flour mixture; stir gently with a wooden spoon to blend. Turn into a greases 13 x 9 baking dish. Bake in a 350 degree oven for 50 minutes. Cool in pan on a wire rack. If desired, sprinkle with confectioners’ sugar.
