Because of this blog, we have weird food night in our house. Admittedly, some of the recipes in my file are a bit strange. This is the Mid Century way though. Strange combinations that don’t sound like they work.
And yet, somehow they work. Okay, not always! But this time they did.
I really wasn’t sure what to expect when reading the recipe. I envisioned pancakes with chunks of meat in them.
That was not the result.
To say pancakes I think is misleading. These are not pancakes. They are more mini hamburgers.
The main difference to a regular hamburger patty is the egg white.
And this is probably where the pancake term comes from. The egg white acts as a binder, and a bluffer.
There are little pockets of airy egg white between the hamburger morsels.
And the pancakes had a ton of flavor! I served them with a little dab of spicy mustard on the side.
I think this recipe still qualifies for weird food night. But the flavor is definitely there.
MEAT BALL PANCAKES
3 Egg Yolks, Lightly Beaten
1/2 Pound Ground Beef
1/4 Teaspoon Baking Powder
1/2 Teaspoon Salt
Dash Pepper
1 Teaspoon Lemon Juice
1 Tablespoon Minced Parsley
1 Tablespoon Grated Onion
3 Egg Whites, Stiffly Beaten
Blend together yolks, ground beef, baking powder, salt, pepper, lemon juice, parsley and onion. Fold in egg whites carefully. Drop by spoonfuls onto a greased hot griddle. When puffed and brown, turn and brown the other side. Serve at once.
