Warm and Good

I think I have mentioned before that I love coffee cake. It is something that I think we should have more of for sure!



The base layer of the cake is very thin. It does puff up a bit during baking so you get a nice layer of cake. Some coffee cakes are very thick, which gives them a tendency to be a little dry. This was definitely not dry.




I used plums for the fruit. They were perfectly ripe, so once cooked they were quite soft. Some of the plum flavor soaks into the base cake.





The sugar mixture on top coats the fruit nicely. It gives the dish just a touch of sweetness.





This was a very enjoyable coffee cake. We ate it while still warm and it did not last long!




Harvest Coffee Cake

1 Cup Flour

1/4 Teaspoon Salt

1 Tablespoon Sugar

1 Teaspoon Baking Powder

2 Tablespoons Shortening

1/4 Cup Milk

2 Cups Slices Apples, Plums, Pears Or Peaches

1 Cup Sugar

1 Teaspoon Cornstarch

1 Egg, Beaten

1/2 Cup Milk


Sift flour, salt, sugar, and baking powder. Cut in shortening with a pastry blender. Add 1/4 cup milk and mix well. Spread into the bottom of a greased 10x6 baking dish. Arrange fruit slices on top. Use one kind of fruit or a combination of different fruits. Combine remaining ingredients and pour over fruit. Bake in a 425 degree oven for 30 minutes.
