I have made a dish similar to this before. It is an interesting combination of tart, sweet and salt.
The bacon is definitely the salty part. And of course, bacon. . .
The vinegar gives the sauce a very tart taste.
And of course, sugar. Obviously that adds sweetness.
The end result is a sweet and sour sauce.
This sauce blends nicely with the beans both in flavor and in texture.
I am not sure I would call it a salad, but it is a great side dish.
HOT GREEN BEAN SALAD
1 1/2 Pounds Green Beans, Cut into 1 Inch Pieces
3 Slices Bacon, Diced
1 Onion, Chopped Fine
1/4 Cup Vinegar
1 Tablespoon Sugar
1 Teaspoon Salt
1/8 Teaspoon Pepper
Fry bacon until crisp. Remove from pan. Sauté onion in drippings for 3 minutes. Add bacon and remaining ingredients and heat through. Pour over warm beans.
