I know that kolachy has a traditional prune filling. That is why I made this recipe - to fill the kolachy I was making.
This is very prune.
I guess I am not surprised, there really aren’t any other ingredients. At least not major ones.
The filling is very easy to make. Boiling the prunes with the water and sugar does impart a small amount of sweetness into the fruit.
It also softens up the dried fruit quite nicely. I found it was quite easy to run the cooked mixture through the food mill.
The end result is a very creamy prune mixture. The lemon rind gives it a little brightness. The cloves and allspice give it a little extra flavor.
I don’t care for prunes, but the filling was perfect for the recipe.
PRUNE FILLING
1/2 Pound Prunes
1/4 Cup Sugar
3/4 Cup Water
1/2 Teaspoon Grated Lemon Rind
1/16 Teaspoon Ground Cloves
1/8 Teaspoon Allspice
Place prunes in a saucepan with water and sugar. Bring to boiling. Reduce heat and simmer 45 minutes. Drain. Put fruit through a food chopped or coarse sieve. Add rind, cloves and allspice.
