Versatile Recipe For Dinner or Appetizer

I served this recipe as a meal. Honestly though, I think it would be a great appetizer too.

The recipe itself is really very simple. It takes a few minutes to prepare, and really only 10 minutes to cook.

I placed two rolls on each skewer with a chunk of pineapple in between. I used long metal skewers. I think you could use smaller wooden skewers with just one roll and it would be a perfect passed appetizer.

Depending on the size of your scallops and pineapple chunks, you could devour this in one bite.

The bacon crisps nicely during broiling. It also allows the fat to soak into the scallop.

I was concerned that the scallop would be over done. Admittedly the smaller ones were a little over, but not horribly so. The larger scallops were perfectly cooked. I would say maybe cook in batches according to scallop size if your scallops are not uniform.

The recipe is simple - but the flavor is great.
BROILED SCALLOPS HAWAIIAN
24 Small Scallops
24 Pineapple Wedges
24 Bacon Strips, 4 inch long
6 Slices Buttered Toast
Place a scallop and a pineapple wedge at opposite ends of each bacon strip. Roll strips towards the center so that the scallops and pineapple are wrapped in bacon and meet in the middle. Place two together on a skewer so you have 12 skewers. Broil until bacon is crisp, about 10 minutes, turning to brown all sides. Place two on a slice of toast and remove skewers.
