Yes, this is basically a vegetable soup. But the vegetables are a little different.
The turnips add a very nice touch and give the soup a little different taste.
For the cabbage I used a red cabbage. I like red cabbage, it has a slightly sweeter taste than green cabbage.
Of course, the red cabbage colored the soup quite a bit. My soup was a little on the purple side at the end.
The leeks gave the soup the onion flavor with a little more crunch.
I do think it needed just a touch more salt.
The soup was enjoyable. I liked the combination of vegetables.
I think I would have added a few more spices or herbs. . .
GARDEN SOUP
1 Carrot, Diced
1/2 Small Turnip, Diced
1/3 Cup Shredded Cabbage
1 Tablespoon Butter
3 Cups Stock
1/2 Leek, Sliced
1/2 Cup Shelled Peas
Salt
1/2 Potato, Diced
1 Teaspoon Minced Parsley
Sauté carrot, turnip and cabbage in butter. Add stock, leek, peas, salt, potato and parsley. Cover and simmer for 40 minutes.
