Vegetable Medley With Confetti Dip

This dip has a lot going on. There are a lot of ingredients!



The dip comes out fairly chunky. Which is odd when dipping vegetables into vegetables . . .




The dip tastes good, it just has the strange consistency.



It looks beautiful, lots of color in the final product. It would be great to serve for a dinner party or event.



I will admit that this is not my favorite vegetable dip. There are others I have made that have tasted much better. I have had dips that tasted worse. . .



VEGETABLE MEDELY WITH CONFETTI DIP

1 Bell Pepper, Finely Chopped

1 Tomato, Finely Chopped

1 Bunch Scallions, Sliced

8 Ounces Cream Cheese

½ Cup Sour Cream

1 Teaspoon Dry Mustard

1 Teaspoon Salt

½ Teaspoon Black Pepper

½ Head Cauliflower

½ Head Broccoli

1 Cucumber, sliced

4 Stalks Celery

1 Pint Cherry Tomatoes

2 Bell Peppers, Sliced


In a small bowl combine chopped bell pepper, tomato, scallions, cream cheese, sour cream, mustard, salt and pepper. Blend well and chill.


Arrange remaining vegetables on serving platter or wooden skewers. Serve with chilled dip.
