Unstuffed Pepper

Okay, so the title of this recipe is strange. Rice ball? Casserole?



I would not really call this a casserole. It does not have a casserole vibe to it. Maybe if there were some vegetables thrown in or something . . .



The patties are more like a hamburger shape - not balls.



They taste like the filling of a stuffed pepper. Or maybe a porcupine ball. My husband had no idea what a porcupine ball was.



The patties are quite moist. You don’t really notice the mashed potatoes at all. The rice cooks beautifully.



They are also very well seasoned.




The tomatoes and water mixed together provide a bit of moisture to the patties as well. They also give you just a touch of acid in the dish.



It really does remind me of the center of a stuffed pepper. Or an individual little meatloaf. I was surprised at how much we enjoyed them.



Hamburger and Rice Ball Casserole

1/2 Pound Hamburger

1/4 Pound Ground Pork

1 Egg, Beaten

1/2 Cup Cold Mashed Potatoes

1/2 Cup Uncooked Rice

1/4 Cup Evaporated Milk

1/2 Cup Chopped Onion

1 1/2 Teaspoons Salt

1/4 Teaspoon Pepper

1/4 Teaspoon Poultry Seasoning

2 1/2 Cups Diced Tomatoes

3/4 Cup Water


Combine hamburger, pork, egg, mashed potatoes, rice, milk, onion, salt, pepper and poultry seasoning. Form into 8 equal patties and place in a large covered baking dish. Mix tomatoes and water and pour over patties. Cover and bake in a 350 degree oven for 1 hour. Remove cover and bake 30 minutes more, basting with sauce occasionally.
