I enjoy cheese danish and things like that. Imagine my surprise when I found out that the cheese used is cottage cheese.
That’s right, most of the recipes I have found for cheese filled pastry and cookies calls for cottage cheese. I would have thought cream cheese would be the go to.
This is the final filling I made for the kolachy I was making.
The filling turns into the cheese filling I know and love. It is kind of magic really.
I used regular raisins instead of white raisins. I thought I had white or golden raisins in my pantry. But I did not.
I don’t think this changed the flavor at all, just the appearance.
So if you are filling some kolachy or making a pastry, this is a great recipe to try!
COTTAGE CHEESE FILLING
1/2 Pound Cottage Cheese
2 Egg Yolks
2 Tablespoons Sugar
1 Tablespoon Melted Butter
1/8 Teaspoon Mace
Dash Salt
1/4 Cup White Raisins
Combine all ingredients mixing just enough to blend.
