I am a big fan of potatoes. Really of any preparation.
This is a pretty simple recipe. Very easy to make.
Making the potatoes like this gives you a great presentation.
I baked the potatoes in a 350 degree oven for 1 hour. I did this early in the day, so when I went to assemble the dish, they were no longer hot. This means it was much easier to handle the potatoes.
Mixing the potato pulp with milk and butter, I melted mine, gives them a nice creamy texture.
Browning them in the oven gives the tops of the potato a nice brown tinge. It also helps reheat the potato.
I served these with the Stuffed Pork Chops. It was a lovely side.
POTATOES ON THE HALF SHELL
2 Large Baking Potatoes
2 Tablespoons Butter
2 Tablespoons Hot Milk
Salt and Pepper
Cut potatoes lengthwise into halves. Scoop out the inside and mash. Add remaining ingredients and beat until fluffy. Refill shells and brown slightly in a 400 degree oven.
