Tomato Shrimp

The first thing I want to say about this recipe is that 30 minutes is way too long to cook shrimp!



The dish has some hints of cajun, but just very small hints. I think it could have been much better with some different spices. A cajun seasoning would have been a great addition.




The sauce is basically a tomato sauce. The tomato paste gives it a lovely red color.




It is a bit on the acidic side. I guess that is to be expected from a tomato based sauce.




My only real issue with the dish was the cooking time. Shrimp cook very quickly, 10 minutes or so. I found that cooking the dish for 30 minutes made the shrimp a little chewy.



I served the shrimp over rice. It was a good dinner, just needed a little less cooking time for the shrimp.



SHRIMP NEW ORLEANS

2 Tablespoons Butter

1 Cup Chopped Onions

2 Tablespoons Flour

2 Cups Water

1/3 Cup tomato Paste

2 Teaspoons Salt

1/4 Teaspoon Pepper

2 Pounds Shrimp, Cleaned and Shelled

1 Tablespoon Snipped Parsley

1 Clove Garlic


Melt butter. Add onions and cook a few minutes. Stir in flour, gradually add water. Add tomato paste, salt and pepper while stirring. Drop in the shrimp. Cover and simmer 30 minutes. Rub serving dish with garlic and add shrimp mixture.
