Thick Soup

I am a fan of potato soup. Well, I am a big fan of potatoes in general. Potatoes equal comfort food for me.



I loved the addition of the salt pork in this recipe. It gives the soup a nice touch of pig flavor.



The turnips were also a nice addition. They are very similar in texture to the potato. They do have a bit more of an earthy flavor though.



The turnips and the carrots provide a great addition to the potatoes and makes this soup super vegetable packed.



The white sauce is a great way to give the chowder some rich dairy base. It also helps thicken the chowder quite nicely.



The recipe does take about an hour from start to finish. It is a great recipe for a cold day!



POTATO CHOWDER

1/3 Cup Diced Salt Pork

2 Cups Diced Potatoes

1 Cup Diced Turnips

1 Cup Diced Carrots

1 Medium Onion, Minced

1 Stalk Celery, Cut Into Small Pieces

1 Green Pepper or Pimiento, Diced

2 Cups Thin White Sauce


Fry pork and brown vegetables in fat. Cover with boiling water and cook until tender. Add white sauce to vegetable mixture; season to taste.
