Thick and Hearty Blue Cheese Dip

I made a bunch of wings for our Super Bowl party. In my opinion, you can’t eat Buffalo Wings without some blue cheese dip.



But I liked the looks of this recipe. It is blue cheese, but just a little different.



To start, there is a lot more in this than the normal dip.



Being Mid Century, there are pimientos. I am not sure why pimientos are not as popular anymore. I like them though. They are a bit sweeter than a bell pepper, but the same firmness and texture.



The horseradish gives the dip a little spicy flavor. Not too much, but not too little.



The green onion gives the dip a little crunchiness.


The dip is also thicker due to the cream cheese than the usual thin dip



It was great with the buffalo sauce. It was also really good with the vegetables in the crudités.



BLUE CHEESE DIP

8 Ounces Cream Cheese, Softened

1/2 Cup Sour Cream

1/2 Cup Crumbled Blue Cheese

1 Teaspoon Lemon Juice

1/2 Teaspoon Horseradish

1/4 Cup Grated Carrot

1/4 Cup Finely Chopped Green Onion Tops

2 Tablespoons Chopped Pimiento

2 Tablespoons Chopped Parsley

1/4 Cup Cooked Bacon Pieces (Optional)


Combine cream cheese, sour cream and blue cheese. Beat with an electric mixer until smooth. Stir in remaining ingredients. Chill well. Serve with fresh vegetables.
