Thick and Hearty Banana Bread

This bread comes out very dense.



This is probably because of the bran flakes. I have never used bran flakes in banana bread before. It adds an almost crunchy aspect to the bread.




I do think that the bread does not need to bake for an hour and ten minutes. I cooked mine the whole time and it came out a little dark on the edges.



I think I could have taken it out at the hour point, but was doing other things and honestly didn’t check the bread until there was about five minutes left on the timer.



The bread was still edible, but it had a hard crust on all the edges.



The bread does indeed taste like a nice banana bread. I’m really not sure about the bran flakes. They are just strange. . .



BANANA BREAD

1/3 Cup Shortening

¾ Cup Sugar

1 Egg, Beaten

2 Cups Bran Flakes

1 ½ Cups Sifted Flour

2 Teaspoons Baking Powder

½ Teaspoon Salt

½ Teaspoon Baking Soda

½ Cup Chopped Walnuts

1 ½ Cups Mashed Banana

2 Tablespoons Water

1 Teaspoon Vanilla


Cream well shortening and sugar. Add egg and bran flakes. Sift together flour, baking powder, salt and soda. Add Nuts. Combine bananas and water. Add to creamed mixture alternately with dry ingredients. Stir in vanilla. Baked in a greased loaf pan in a 350 degree oven for 1 hour and 10 minutes.
