They Stay Soft

I love a soft cookie. Especially when they stay soft!



I made these cookies on a Monday. I make a dessert of some type every Monday. We have a meeting at our house every week, so I like to have something sweet available.




The cookies were a hit that night, but the recipe makes a lot! So I sent the left overs to work with my husband on Tuesday.




The cookies were definitely a hit on Tuesday as well!





The cookies are packed with molasses flavor. The cinnamon, ginger and nutmeg give them a hint of a gingerbread feel.




Sprinkling the cookies with sugar adds a needed touch of sweetness to each bite.


The best part was that the cookies stayed soft for the three days they lasted! I would love to try them again and see how long they stayed soft.



SOFT MOLASSES COOKIES

3 Cups Sifted Flour

2 Teaspoons Soda

1 Teaspoon Cinnamon

1 Teaspoon Ginger

1 Teaspoon Nutmeg

1/4 Teaspoon Cloves

3/4 Teaspoon Salt

1/2 Cup Shortening

1/2 Cup Sugar

1 Egg, Beaten

1 Cup Molasses

1 Tablespoon Vinegar

1/2 Cup Boiling Water


Sift together flour, baking soda, spices and salt. Cream shortening with sugar until light. Add egg, then molasses and beat thoroughly. Add sifted dry ingredients to creamed mixture alternately with vinegar and boiling water. Mix thoroughly and drop by spoonfuls 2 inches apart on a well greased cookie sheet. Sprinkle with sugar. Bake in a 375 degree oven for 12 to 15 minutes.
