They Are Super Duper

This recipe is the other recipe I made for football Sunday along with the coconut macaroons. You could not get two more different cookies!

Melting the chocolate and the shortening together gives you a very smooth base with which to add your ingredients. Mixing in the sugar gives you an almost fudge like feel.

The batter is quite soft once you have mixed all the ingredients in. Thankfully, chilling the batter does harden it up quite nicely.

I used a small scoop to make my balls. I dipped it into the sugar in between each scoop, so the powdered sugar coating was rather thick, but the scoop didn’t stick.

Rolling the balls in confectioners’ sugar adds a little more sweetness. It also gives the cookies a lovely crinkle effect once they are baked.

The cookies are also nice and soft on the inside, with just a hint of crunch on the outside. And they stay soft!

These are absolutely delicious! You definitely need to put these on you must make list!

SUPER DUPER CHOCOLATE COOKIES

1/2 Cup Shortening

4 Ounces Unsweetened Chocolate

2 Cups Sugar

2 Teaspoons Vanilla

4 Eggs

2 Cups Flour

2 Teaspoons Baking Powder

1/8 Teaspoon Salt

1/2 Cup Chopped Nuts

Confectioners’ Sugar

Melt shortening and chocolate together. Add sugar and vanilla mixing well. Add eggs one at a time beating well after each addition. Sift together the flour, baking powder and salt. Add to chocolate mixture with nuts, mixing well. Chill dough several hours. Form into small balls and roll in confectioners’ sugar. Bake in a 350 degree oven for 12 to 15 minutes.
