Tart Muffins

I really do love the taste of lemon. Whether it is sweet or tart, I can’t get enough!



These muffins definitely pack the tartness punch!




1/2 a cup is a lot of lemon juice. And you really taste it!



On top of that, you get the tartness from the rind as well.



Thankfully the sugar on top cuts that a bit. And it is a lot of sugar on top.




The sugar forms a sweet crust on the top of each muffin.



The sugar also gives the muffins a pretty crackle appearance.



I made these muffins for a fundraiser at my husband’s work. They sold out pretty quickly, so I think there are some other lemon lovers out there!



Rich Lemon Muffins

2 Cups All Purpose Flour

1/2 Cup Sugar

1 Teaspoon Baking Powder

1 Teaspoon Salt

1/2 Cup Butter

1/2 Cup Lemon Juice

2 Eggs

Grated Rind of 1 Lemon

2 Tablespoons Sugar



Heat oven to 400 degrees. Butter muffin cups. Combine flour, sugar, baking powder, and salt. Blend well. Melt butter. Off heat, stir in lemon juice, eggs, and lemon rind. Stir egg mixture into dry ingredients and blend until well moistened. Spoon into muffin cups and sprinkle the tops of each muffin with 2 tablespoons sugar. Bake 15 to 20 minutes.
