Sweet Vegetables

I will start by saying that I broke my pressure cooker when canning some chicken stock. I ordered a new one, but did not have it in time for this recipe.



So I had to cook the turnips the long way. I boiled them for about thirty minutes to get them soft.



The glaze is nice, and sweet. It really balances the earthy flavor of the turnips.



I would definitely add salt if I made these again! There was a great lack of seasoning.



The turnips tasted good. I liked the addition of the apricots as well.



Just need salt!!!



GLAZED TURNIPS

1 Medium Yellow Turnip, Cubed

1 Dozen Dried Apricots

½ Cup Water

½ Cup Brown Sugar

2 Tablespoons Butter


Soak apricots in hot water for 1 hour. Place turnip cubes in a pressure cooker. Cook for 4 minutes. Add sugar and butter to a small saucepan and cook until butter is melted. Add apricots and turnips. Toss to glaze.
