Sweet Potatoes Au Boring

I like sweet potatoes. This is a fairly new thing – we didn’t have sweet potatoes growing up. But I came to love them about twenty years ago.



This dish sounds good. But it needs a few things.



First – it needs salt! And probably pepper. The dish comes out very under seasoned.



Second – the potatoes did not cook evenly. Boiling the sweet potatoes first would help with this. But this would also make it more difficult to arrange the slices in the casserole.



Ideally you would partially cook the sweet potatoes before baking. . .



The brown sugar adds sweetness that isn’t necessarily needed.



So, yeah, the potatoes are kind of boring. . .


SWEET POTATOES AU GRATIN

5 Medium Sweet Potatoes, Cut into ¼” slices

2 Tablespoons Brown Sugar

1 Tablespoon Butter

1/3 Cup Buttered Bread Crumbs


Place half the potatoes in a greased baking dish. Sprinkle with brown sugar and dot with bits of butter. Arrange remaining potatoes on top. Cover with bread crumbs. Bake in a 350 degree oven for 10 – 15 minutes, or until bread crumbs are browned.
