Sweet Muffins With A Crunch

My husband’s work had a fundraiser where they were selling breakfast. I was asked to provide some bakery type items. I made five recipes, and wanted something a little different.



This recipe intrigued me. You don’t see a lot of apple muffins.



I cut the apples fairly small, which gave a good amount of apple to work through the batter.



The muffins themselves had a nice flavor. They were moist, but not too sweet.



The topping was quite lovely. It had a very streusel feel to it.




For the nuts I used walnuts. I think walnuts and apples compliment each other.



The topping gets hard, and gives a little crunch.



I don’t think the muffins even need butter - which is saying something for me! I love butter on my muffins in the morning!



Apple Muffins

2 Cups Flour

1/2 Cup Sugar

3 Teaspoons Baking Powder

1/4 Teaspoon Salt

1 Cup Chopped Apples

1 Egg, Beaten

1 Cup Milk

3 Tablespoons Melted Butter

1/3 Cup Brown Sugar

1/2 Teaspoon Cinnamon

1/3 Cup Chopped Nuts


Sift together dry ingredients and then toss with apples. Add combined liquid ingredients, mixing just enough to moisten. Turn into buttered muffin pans. Mix brown sugar, cinnamon and nuts. Sprinkle on top of muffins. Bake in a 400 degree oven for 15 minutes.
