Surprisingly Good!

I am a fan of cooked onions, so this was an interesting recipe.



The bacon adds a lovely flavor to the dish. Using the bacon drippings to toast the bread crumbs gives them a nice bacony flavor as well.




The onions and apples cook nicely. They both come out very soft at the end of the cooking time.



I was surprised at how well the apples and onions went together. They really provided a lovely taste.



I liked this side dish very much, so did my daughter. My husband said it wasn’t his favorite.




ONION AND APPLE CASSEROLE

4 Large Onions

4 Medium Apples

8 Slices Bacon

1/2 Cup Soft Bread Crumbs

3/4 Cup Hot Stock

1/2 Teaspoon Salt


Preheat oven to 375 degrees. Peel onions and cut into 1.8 inch thick slices. Peel, core and cut apples into slices. Sauté bacon and remove from pan. In 2 tablespoons remaining bacon fat toss the bread crumbs. Grease a baking dish. Arrange the onions, apples and bacon in alternating layers. Combine stock and salt and pour over casserole. Bake for 30 minutes covered. Uncover and top with reserved crumbs. Bake an additional 15 minutes.
