I was expecting this recipe to be a snack of sorts. Honestly it was a dessert, or cookie bar.
The crust is basically a butter cookie covering the bottom. It is rich and buttery! The crust is crisp on the edges and soft in the middle, which was perfect.
The topping was a real surprise. It cooks up almost like a gooey candy.
The coconut and walnuts give you a nice crunch. The walnuts do cook down a bit, so they aren’t too crunch though.
The cherries are a lovely pop of color and flavor.
My husband loves these. And he claims he doesn’t like coconut!
NUT SNACKS
1/2 Cup Butter
1/2 Cup Granulated Sugar
2 Egg Yolks
1 Teaspoon Vanilla
1 1/2 Cups Flour
1 Cup Packed Brown Sugar
1/2 Cup Flaked Coconut
2 Egg Whites
1/2 Cup Walnuts
1/4 Cup Maraschino Cherries, Drained and Chopped
Cream together butter and sugar. Beat in egg yolks and vanilla. Stir in flour. Pat mixture into an ungreased 9 x 9 baking pan. Combine brown sugar, coconut and egg whites. Stir in walnuts and cherries. Spread over crust. Bake in a 350 degree oven for 30 to 35 minutes. Cool. Cut into squares.
