Surprising Casserole

I was never a big casserole lover. Growing up, we didn’t really eat them.



My mother-in-law is a huge casserole maker. So my husband is very fond of a good casserole.




Thankfully for him, the mid century kitchen was full of casserole recipes.



This seems like a pretty basic casserole. My daughter requested this recipe as she was looking for something meaty, but not too meaty - her words.



I was surprised that there was no cheese, or sauce of any kind in the recipe. I didn’t have high hopes because of that.



Thankfully, I was wrong. This was actually really good.



The flavoring was perfect. The tomatoes blend to make a sauce of sorts, so the casserole isn’t overly dry.



The shell noodles capture some of the “sauce” so the noodles are lovely as well.



My husband and daughter both went back for seconds. And the recipe made enough they both took it as leftovers the next day.



It is a pretty basic recipe, but it is very much worth it!


EASY HAMBURGER CASSEROLE

1 Tablespoon Fat

1 Pound Hamburger

3/4 Cup Chopped Onion

2 Cloves Chopped Garlic

1 Can Diced Tomatoes

16 Ounces Tomato Sauce

8 Ounces Water

1 Can Corn

1 Pound Cooked Sea Shell Noodles

1 1/2 Teaspoons Salt

1 Cup Diced Celery


In fat, brown hamburger, onion, and garlic. Add tomatoes, sauce, water, corn, noodles, and salt. Place in a casserole and bake in a 350 degree oven for 20 minutes. Stir in the celery and bake an additional 10 minutes.
