This week I made Kolachy. So I needed some fillings.
I chose the apricot, prune and cottage cheese fillings - they are the most traditional.
I was surprised at how easy and simple the fillings are to make.
Three ingredients keeps the filling mostly fruit.
The sugar adds just a touch of sweetness - it is a cookie after all. It should be a little sweet.
The hardest part about this recipe is running the apricots through the food chopper.
Apricots tend to have a thicker skin, so you have to run them through the mill quite a few times to get the pulp.
The end result is fairly creamy, while still having some tiny chunks of apricot.
APRICOT FILLING
1/2 Pound Dried Apricots
1/3 Cup Sugar
1 Cup Water
Place apricots in a saucepan with sugar and water. Heat to boiling. Lower heat, cover and simmer 45 minutes. Cool. Drain. Run through a food chopper or coarse sieve.
