Successful Biscuits!

I have made biscuits before; they have almost always turned out like little mini bricks. Usually, I have tried to make buttermilk biscuits. I am a southerner after all. Obviously not a very good southerner if I can’t make biscuits!



I was not optimistic this morning when I started this recipe. The recipe itself is very easy, not very many ingredients. I used very cold butter, right out of the refrigerator. I have always understood that cold butter is necessary in making biscuits and pastries. So I took the butter out of the refrigerator right before mixing.



The dough was very easy to work with and rolled out nicely. I used a drinking glass to cut the biscuits. The recipe made 10 biscuits.



My plan for this morning was sausage gravy and biscuits. I didn’t have any store bought biscuit dough so these had to work!



I didn’t peek while they were cooking, just went about making the sausage gravy. So the suspense was high when the timer went off!



They came out beautifully! Well, mostly beautifully. The biscuits I cut first rose nicely. The biscuits from the second roll out and cut did not. My thinking is that the dough from the second batch was over worked. I did get seven very nice biscuits.



I brushed them with melted butter as soon as they came out of the oven. They were light, yet crispy on the tops. They were also hearty enough to stand up to the sausage gravy.



My advice for anyone trying them – try to get all your biscuits cut in the first roll out!


BAKING POWDER BISCUITS


2 Cup Sifted Flour

3 Teaspoons Baking Powder

¼ Teaspoon Salt

6 Tablespoons Butter

2 Egg

½ Cup Milk


Preheat oven to 450 degrees. Combine flour, baking powder and salt. Cut in butter until consistency of coarse meal. Combine remaining ingredients; stir into flour mixture. Knead gently about 10 times. Roll ¼ inch thick on a lightly floured board. Cut into 3 inch circle. Place on ungreased baking sheet. Bake 12 to 15 minutes. Cool.
