Stupid Potatoes

It seems that whenever I make a dish like this, the potatoes are always a problem. As it was with this dish.



The celery and onion cook nicely with the tomatoes.



The cod steams beautifully in the sauce. It is flaky and lovely in the end.



The problem is the darn potatoes. Even boiling them a bit, and cooking them for 30 minutes didn’t help. They were nearly raw at the end.



I had to scoop them out and microwave them for a few minutes in order to eat them.



I think the way to fix this would be to boiling them until they are halfway done first. I think this would ensure they were cooked all the way through.



The flavor was good. Once I got the potatoes soft enough, they were nice too.



COD CREOLE

3/4 Cup Minced Celery With Leaves

1 Onion, Chopped

1/4 Cup Oil

2 1/2 Cups Diced Tomatoes

1 Teaspoon Salt

1/8 Teaspoon pepper

3 Pounds Fresh Cod

6 Potatoes, Pared


Cook celery and onion in oil until tender. Add tomatoes, salt and pepper then heat to boiling. Add cod and potatoes. Cover and simmer for 30 minutes.
