These stuffed peppers are so simple! They are a great weeknight dinner option!
The recipe itself is simple. Cleaning the peppers was the hardest part, which wasn’t hard at all.
I used taco seasoning, and honestly doubled what was called for. One tablespoon didn’t seem like enough.
I also poured a small amount of water into the bottom of the pan while the peppers were cooking. I find this helps the peppers cook more evenly.
I definitely recommend making this the next time you need a dinner in a hurry!
MEXICAN STUFFED BELL PEPPERS
½ Pound Hamburger
2 Cups Cooked Rice
½ Cup Chopped Onions
1 Egg, Slightly Beaten
1 Tablespoon Mexican Seasoning
1/8 Teaspoon Black Pepper
6 Bell Peppers, tops and seeds removed
Cook hamburger with onions until browned and crumbly. Mix with remaining ingredients (except peppers). Scoop beef mixture into peppers. Bake in a 350 degree oven for 40 minutes.
