Since my lemon pie didn’t really work out, I needed another treat to serve my Monday night group. I had some gumdrops and have had this recipe in the back of my mind for a while.

The recipe creates a brownie like bar.


The brown sugar gives the bars a lovely caramel color. The cinnamon gives the bars a lovely flavor.

The gum drop pieces are really the star in these bars.

The pieces of gum drop look a bit like stained glass in the caramel colored bar. They are bright little drops of color throughout.

The gum drops also soften up quite nicely during baking. They almost melt really.

Depending on the type of gum drop you use, they also add little pops of flavor to the bars. I used spicy gum drops. So I had cinnamon and spearmint type flavors. You could completely change the taste by using a fruity drop.

We liked these, they were something just different enough and were really enjoyable.
GUMDROP BARS
2 Cups Cake Flour
1/4 Teaspoon Salt
1 Teaspoon Cinnamon
3 Eggs
2 Cups Brown Sugar
1/4 Cup Evaporated Milk
1 Cup Soft Gumdrops
1/2 Cup Chopped Nut Meats
Cut gumdrops into small pieces. Sift flour, salt and cinnamon together. Beat eggs util light. Beat in sugar and milk gradually. Add flour mixture in thirds, beating until smooth after each addition. Add gumdrops and nuts. Spread in a greased pan. Bake in a 325 degree oven for 25 minutes.
