Special Beans

Growing up we didn’t eat a lot of vegetables. We mostly had canned peas, canned corn, or canned green beans.

As an adult, I must say I despise canned vegetables! I much prefer fresh. If I can’t have fresh - I go with frozen. They tend to be crisper and have much more flavor.

I find canned vegetables are packed with salt. And they tend to be mushy because they are living in water or other liquid. I don’t like mushy vegetables.

Sautéing the onions and mushrooms in the fat soften them just enough. For the mushrooms I used porcini. My husband had bought me some dried porcini mushrooms, so I simply rehydrated them in some boiling water for a few minutes.

Twenty minutes seems a little long to me. I ended up cooking my beans for about 12 minutes. This ensured they were soft crisp, not just soft.

The seasoning was just right for these beans. The mushrooms helped add some flavor and seasoning.

Adding the cream at the end gives the beans a lovely and flavorful sauce. This sauce gives the beans a little special feeling. So they aren’t just everyday beans. . .
GREEN BEANS DE LUXE
1 Pound Green Beans
2 Tablespoons Bacon Fat
1 Small Onion, Chopped
3 Ounce Can Sliced Mushrooms
1/2 Teaspoon Salt
Dash Pepper
1/4 Cup Light Cream
Cut beans crosswise into 1 inch slices. Heat bacon fat in skillet. Add beans, onions, mushrooms with their liquid, salt and pepper. Turn heat very low and cook, covered, 20 minutes. Add cream and heat through.
