Soft, Moist Cake

I know this is supposed to be a bar, and when I think of a bar, I think of something with a cookie like texture.



These had a cake like texture.




They were very light and fluffy. And very moist.




You can definitely taste the coffee. That, combined with the cinnamon give the bars a very nice molasses color.






The raisins add a touch of sweetness. I don’t love raising, but they work with this recipe.


This would be a great breakfast cake. It worked as a not too sweet dessert too.



CINNAMON COFFEE BARS

1/4 Cup Shortening

1 Cup Packed Brown Sugar

1 Egg

1/2 Cup Hot Coffee

1 1/2 Cups All Purpose Flour

1 Teaspoon Baking Powder

1/4 Teaspoon Baking Soda

1/4 Teaspoon Salt

1/2 Teaspoon Cinnamon

1/2 Cup Raisins

1/4 Cup Chopped Nuts


Heat oven to 350 degrees. Mix together the shortening, sugar and egg. Stir in coffee. Stir dry ingredients together and stir in. Blend in raisins and nuts. Spread in a greased and floured 13x9 inch pan. Bake 18 to 20 minutes. Cut into 2 x 1 1/2 inch bars.
