Spanish Rice is one of the things my husband grew up with. I had never had it before we got married. But it is a dish I soon learned to enjoy.
I love the addition of bacon in this recipe. It adds the wonderful bacon flavor to the entire dish.
I always worry about the rice cooking completely in a dish like this. I have had dishes where the rice definitely does not cook. It’a always a disappointment when that happens.
Thankfully, the rice cooked very nicely in this recipe. It was very soft at the end of baking.
The recipe is very simple to make. Yes, it does take quite a long time to cook, but the long cooking time gives the rice a chance to infuse with the tomato flavor.
I think this dish could definitely be considered comfort food. It gives you a warm and fuzzy feeling.
And it makes a lot, so there were plenty of leftovers.
SPANISH RICE AND BEEF
4 Slices Bacon
1 Onion, Chopped
1 1/4 Pounds Ground Beef
1 1/4 Teaspoons Salt
3 1/2 Cups Diced Tomatoes
3/4 Cup Raw Rice
1/2 Teaspoon Paprika
Cut bacon into small pieces. Sauté until done. Remove from skillet. Brown onion in remaining bacon drippings. Add beef, salt and paprika, brown lightly. Add tomatoes, cooked bacon and rice. Turn into a greased casserole. Cover. Bake in a 350 degree oven for 1 1/2 hours.
