Simple Weeknight Dinner

I have made recipes similar to this in the past. Honestly it resembles a jambalaya a lot.



It is pretty basic - meat, rice and tomatoes. All you have to do is adjust the seasonings to get a variety of different recipes.



The bacon gives the dish a lovely bacon flavor throughout. Who doesn’t like bacon!




The hamburger gives the dish a heartiness. This makes it very filling as well.



The onion and bell pepper give the dish some crunchiness, but not too much.



The tomatoes give the dish a lovely color and a bit of acidity.



It is quite an easy dish to make. You really only have to do something with it for about fifteen minutes. Then you cover it and walk away. Yes, you should stir it occasionally, but you can absolutely do other things while it cooks.



MEXICAN RICE

3 Slices Bacon

1 1/2 Cups Chopped Onion

1 Cup Chopped Bell Pepper

1 Pound Hamburger

3 Cups Diced Tomato

1/2 Cup Uncooked Rice

1 Teaspoon Chili Powder

1 1/2 Teaspoon Salt

1/4 Teaspoon Pepper


Fry bacon and add onions, bell pepper and hamburger. Cook for 5 minutes. Add remaining ingredients and simmer for 1 hour. Add a little water if needed.
