There was not nearly enough spinach! I served this as a side with the Napa Valley Beef Casserole. Thankfully that dish was so delicious no one really wanted a side.
There was also quite a bit of butter. I would cut the butter called for in the recipe by half at least.
Spinach is spinach, there really isn’t that much to say about it.
This is a very simple recipe, a very simple side dish. I’m not sure one really even needs a recipe to make sautéed spinach. . .
BUTTERED SPINACH
1 Pound Spinach
1 Stick Butter
Place spinach in a saucepan and cook over very low heat for 10 to 15 minutes. Turn occasionally with a fork to prevent sticking or burning. Add salt and pepper to taste. Add butter to coat spinach.
