Simple Pork Dinner

Our garden is winding down, but we still have some tomatoes coming in. Unfortunately there aren’t enough to can, so I need to find recipes that call for fresh tomatoes.



While this recipe has an hour and a half cook time, there is really very little time needed to put it together. So it’s a great weeknight dinner option.



The onions and tomatoes mix great with the curry. They come out very flavorful and delicious.



The pork is cooked through, but not dry at the end. I used bone in chops, so if you use boneless I would definitely cut the cooking time a bit.



I served the pork with rice pilaf. It was a very nice dinner!



CABIN CASSEROLE

I Onion Sliced

1 Tomato, Sliced

1 Teaspoon Salt

1 to 2 Teaspoons Curry Powder

6 Pork Chops


Place onion and tomato in a casserole dish in alternating layers. Sprinkle with salt and curry powder. Lay pork chops on top. Bake at 350 degrees for 45 minutes. Cover with foil, cook an addition 30 to 45 minutes – until chops are tender.
