Forty Five minute for a dinner isn’t all that bad. And really, you don’t have to do much during that time, a little stir from time to time is all.
The dish has a bit of a jambalaya feel. Of course, the flavors are different.
The onion, celery and bell pepper cook nicely throughout the dish. I was afraid they wouldn’t be soft enough. But, they absolutely were.
You do have to watch the moisture content. I added about 3/4 cup more liquid during the cooking time. The bouillon was almost all evaporated and the rice wasn’t cooked yet.
The dish was good, very much a comfort food feel. The tomatoes add a some acid, the paprika a little spice - but not too much. The soy sauce is a great source of saltiness without being overpowering.
It was a nice make it and forget it type dinner.
SPANISH HAMBURGER RICE
3/4 Cup Raw Rice
2 Tablespoons Oil
1 Pound Hamburger
1/4 Cup Chopped Onion
1/2 Cup Chopped Bell Pepper
1/4 Cup Chopped Celery
2 1/2 Cups Diced Tomatoes
1 Cup Beef Bouillon
1/2 Teaspoon Paprika
2 Teaspoons Salt
1 Teaspoon Soy Sauce
1 Teaspoon Sugar
Brown hamburger and vegetables in cooking oil. Add remaining ingredients. Cover and simmer for 45 minutes.
