I served this cocktail when I made the Rice Tamale Pie. This dish had a latin feel, and I think this drink does as well.
Honestly, this felt a bit like a margarita. I know, completely different ingredients, but that is what it reminded me of.
The lime juice gives the drink a lovely tartness that is cut a bit by the simple syrup.
I was surprised how nicely the rum and apricot brandy went together. I used a silver rum, so the cocktail was light in color. A spiced rum would give it a completely different feel.
The drink was quite lovely. I think we will be making it again!
