Rich Molasses Oat Cookie

This recipe produces a very rich, soft cookie. I absolutely loved them!



The molasses gives the cookies a very rich brown color. I also gives them a hint of the molasses flavor.




There are a lot of oats. This makes the cookies nice and chunky.




I used pecans for the nuts. They chop nicely, so there are small bits of nuts throughout the cookies.




I used golden raisins. They plump up nicely during the baking time.



So each bite of cookie has something special in addition to the oats.



The recipe made about four dozen small cookies.



OATMEAL DROP COOKIES

1/2 Cup Shortening

1 1/4 Cups Sugar

2 Eggs

1/3 Cup Molasses

1 3/4 Cups All Purpose Flour

1 Teaspoon Baking Soda

1 Teaspoon Salt

1 Teaspoon Cinnamon

2 Cups Rolled Oats

1/2 Cup Chopped Nuts

1 Cup Raisins


Heat oven to 400 degrees. Mix shortening, sugar, eggs, and molasses thoroughly. Stir dry ingredients together then blend in. Stir in oats, nuts and raisins. Drop dough by rounded teaspoonfuls 2 inches apart on greased baking sheets. Bake 8 to 10 minutes.
