Rich Honey Cookie

This recipe makes a lot of cookies! I used a 2 inch cutter and ended up with about four dozen.



This was a good thing as I used these cookies for the community meal hosted by my church. I like being able to give back a little and donate baked goods to underprivileged people. It seems like a small thing, but I hope it makes an impact.




There is a lot of honey in the cookies. Thankfully I buy my honey in bulk at Costco, so I always have a lot on hand.




All that honey gives the cookies that delicious and rich honey flavor. It also gives them a nice color.




The nutmeg, cinnamon and cloves are the perfect accompaniment to the honey. I truly think they enhance the honey flavor while bringing their own spiciness as well.




The spice combination also gives the cookies a lovely aroma.




The dough is on the stiff side, it does take a little work to get all the flour blended in. Chilling the dough stiffens it even more.



This makes the rolling and cutting process super easy. I did not have to use a lot of extra flour while rolling.

HONEY COOKIES

5 Cups Sifted Cake Flour

1 Teaspoon Baking Soda

1/2 Teaspoon Cinnamon

1/2 Teaspoon Nutmeg

1/2 Teaspoon Cloves

1/2 Teaspoon Salt

2/3 Cup Shortening

1/2 Cup Sugar

1 Cup Strained Honey

1 Egg

1/2 Cup Sour Milk


Sift dry ingredients together. Cream shortening with sugar. Add honey and blend well. Beat egg with milk. Add dry ingredients alternately with milk to creamed mixture. Chill. Roll 1/4 inch thick. Cut with desired cutter. Bake in a 350 degree oven for 20 minutes.
