Refreshing Salad

I have always like radishes. But mostly I used them as garnishes in salads.



That all changed about eighteen years ago when my husband and I visited his parents for the first time after our wedding. His mother served a radish salad.



I was by no means surprised to find that same recipe in my Mid Century recipe box.



This is a very simple dish. It really only takes minutes to put together.



And of course, it is a great use for the radishes growing in our garden.


I used a combination of red and purple radishes. The purple radishes are a little less sharp then the red.



The chives also came from the garden.



The salad is light and refreshing! It’s a perfect summer dish!


RADISH SALAD

1 Bunch Radishes

Chives

Vinegar

Olive Oil

Salt and Pepper

Garlic Powder


Slice radishes thinly. Dice chives and sprinkle over radishes. Season to taste with garlic powder, salt and pepper. Sprinkle with vinegar and olive oil. Chill several hours.
