I will start by saying that I though I bought thick cut pork chops. Unfortunately they were thin. So I didn’t cut the pocket and stuff the chops. I rolled them up around the filling and used tooth picks to keep the pork together.
The filling is a very tasty apple stuffing in flavor. The bread crumbs meld with the other ingredients, it is really good.
The pork cooks beautifully. Searing it first really locks in a lot of flavor. Baking it after gives it a slow cook that keeps it juicy.
I will definitely make this again! It was very delicious and worth the effort!
STUFFED PORK CHOPS
6 Large Pork Chops
1 ½ Cups Whole Kernel Corn
1 ½ Cups Bread Crumbs
¾ Teaspoon Salt
¼ Teaspoon Pepper
1 ½ Tablespoons Minced Parsley
3.4 Teaspoon Sage
1 Tablespoon Grated Onion
1 Cup Diced Apple
1 Egg
3 Tablespoons Milk
Cut a pocket in each pork chop. Combine remaining ingredients. Stuff each chop with corn mixture. Brown chops in fat, season to taste. Add water to pan and bake in a 350 degree oven for 1 hour.
