Quick Weeknight Dinner

What a fast weeknight dinner this is! This flavor is good too!



The bacon really adds a nice flavor and cooking the onions and hamburger in the bacon fat adds that flavor to the rest of the dish.



If you like your celery a little softer, add it with the onions and hamburger at the beginning. It had a little crunch to it they way the recipe calls for it to be cooked. I liked the small bit of crunch – it added a little texture.



I served the dish over rice. My husband went back for seconds!



HAMBURGER CREOLE

3-4 Slices Bacon, Cut up

¼ Cup Chopped Onions

1 Pound Hamburger

½ Cup Diced Celery

¼ Cup Chopped Bell Pepper

1 Tablespoon Minced Parsley

3 Tablespoons Flour

2 Cups Canned Tomatoes

1 Teaspoon Salt


Fry bacon until crispy. Add onion and hamburger, cook until hamburger is browned. Add all other ingredients. Simmer for 15 minutes until thick and creamy. Serve over rice or noodles.
