Quick and Interesting Chili

Well, the recipe doesn’t lie, this is a speedy dish. It makes enough for two people to have two bowls of chili. So it would work for a family of four.



The bacon adds a nice additional element of flavor. I don’t usually add bacon to my chili. It also adds a bit of saltiness, so not at all unpleasant.




I did end up adding another 1/2 teaspoon of chili powder. The original 1/2 teaspoon didn’t seem like enough.



My daughter is a teenager with her first job, so she is not at home for dinner a few nights a week. I picked this recipe because I am trying to wrap my head around the idea that in another year and a half there will only be two of us to cook for. This is not as easy of a transition as it sounds.



I generally make dishes that feed us all for dinner, and then gives us leftovers as well.



The recipe was fine. It wasn’t my favorite chili recipe, but it tastes okay. And the portion size was nice. I did top the chili with shredded cheddar and sour cream to serve.



SPEEDY CHILI FOR TWO

2 Slices Bacon, Chopped

2 Tablespoons Chopped Onion

1/2 Pound Hamburger

1/2 Cup Cooked Tomatoes

1 Tablespoon Chili Sauce

2 Cups Red Kidney Beans

1/2 Teaspoon Chili Powder

1/2 Teaspoon Salt

1/8 Teaspoon Cayenne Pepper



Fry bacon and onion. Add hamburger, brown. Add remaining ingredients. Cook for 15 minutes.
