Quick and Easy Jambalaya

If you want something different for a weeknight dinner, this would definitely work.

I used diced ham and bulk sausage for my meats. I cooked the sausage and crumbled it before adding.


The bacon was a nice touch. It provided the lovely bacon flavor as well as some saltiness.

I used tomato puree as well as a jar of diced tomatoes. I like the bite of the diced tomato - it helps give the dish a little texture.

I also added some cayenne pepper - we like spicy food! The recipe doesn’t call for it, but I think it added something to the dish.
Overall this was a good, quick and easy dish.
JAMBALAYA WITH MEAT
3 Cups Cooked rice
2 Sliced Bacon, Diced
¾ Cup Diced Onions
1 Tablespoon Flour
1 Cup Tomato Puree
1/3 Cup Water
2 Cups Diced Ham, Chicken, Sausage, Shrimp
¼ Teaspoon Thyme
Dash Worcestershire Sauce
Chopped Parsley
Sauté bacon in a saucepan lightly. Add onions and cook until softened. Stir in flour, cook for 1 minute. Add tomato puree and water. Bring to a boil. Stir in rice and cooked meats. Add thyme, Worcestershire sauce and salt and pepper to taste. Stir over low heat for 10 minutes. Serve sprinkled with chopped parsley.
