Pimiento Cheese Ball

I don’t think I have ever made so many cheese balls. They were definitely popular during the Mid Century.

The ball itself is nice and creamy. It spreads nicely on the crackers too.


The pimiento is definitely the star of the ball. You taste pimiento more than any of the other vegetables.


The pecans give the ball a bit of a saltiness that is not at all unwanted.

Overall this was a very nice appetizer option.
PARTY CHEESE BALL
16 Ounces Cream Cheese
2 Cups Shredded Sharp Cheddar Cheese
1 Tablespoon Chopped Pimiento
1 Tablespoon Chopped Bell Pepper
1 Tablespoons Finely Chopped Onion
2 Teaspoons Worcestershire Sauce
1 Teaspoon Lemon Juice
Dash Cayenne Pepper
Dash Salt
Finely Chopped Pecans
Combine softened cream cheese and cheddar, mixing well until blended. Add pimiento, bell pepper, onion, Worcestershire, lemon juice and seasonings. Mix well. Chill. Shape into a ball, then roll in nuts.
