Pie Plate Pizza

The hardest part of this recipe is making the bread dough. Well, it isn’t hard, just takes some time.

You can find the Crusty French Bread recipe in the archives. . .

Spreading the dough in the pie plates was interesting. The crust does rise a bit, so you get a lovely somewhat deep dish slice.

The tomato paste gives you a very concentrated tomato taste. Honestly, I think I would use a tomato sauce. My husband likes a saucy pizza and just felt there wasn’t enough sauce .

The bread dough gives you a nice and thick crust that stands up well to the toppings. There was no crust flopping!

We are not normally deep dish pizza lovers, but really did enjoy this! It was a hearty meal and since there are only three of us - leftovers.

The pizza tasted just as good heated up the next day.

PIZZA

1 Recipe Crusty French Bread Dough

Salad Oil

12 Ounces Tomato Paste

Sweet Basil Leaves

1/2 Pound Mozzarella Cheese

1/2 Pound Italian Sausage

1/2 Cup Chopped Onion

2 Ounces Grated Romano or Parmesan Cheese

Salt, Pepper, Oregano

Prepare dough for Crusty French Bread. Let rise until it doubles in bulk and has a slightly sour, yeasty odor. Cut into 4 portions, cover and let rest 10 minutes. Roll out into 8 inch circle. Lift into pie pans. Press out gently until it is uniformly 1/4 inch thick I the bottom and slightly thicker on the sides. Brush dough with salad oil. Quickly spread tomato paste over the bottom. Sprinkle basil over top. Sprinkle in grated mozzarella cheese, then cooked sausage. Add onion and Romano. Use a pastry brush to pat a thin film of oil over top. Sprinkle with salt, pepper, and oregano. Bake in a 450 degree oven for 20 minutes. Cut into wedges and serve hot.
