Orange Oatmeal Cookies

Every once in a while, I really enjoy an oatmeal cookie. But sometimes they can get boring.



These cookies are not boring at all. The addition of the orange juice and rind really make them different.




The cookies are rich with the brown sugar and granulated sugar. The brown sugar gives the cookies a nice color, and a hint of the molasses flavor.




The cinnamon and allspice give the cookies the traditional oatmeal cookie flavor.



The orange juice and rind really brighten up these cookies! They have just a hint of acid which cuts some of the sweetness.



The orange gives these cookies a brightness that oatmeal cookies are usually lacking.



For the nuts, I used walnuts. I think this was the perfect nut for this cookies. It added an earthly feel to the orange flavor.



The raisins are perfect as well. We all know that raisins already go great with oatmeal. I loved the little bits of sweet fruit throughout the cookies.



And the recipe made a lot of cookies - about five dozen. So they are perfect if you need to take a treat to an event.



ORANGE OATMEAL COOKIES

2 Cups Sifted Flour

1 Teaspoon Baking Soda

3/4 Teaspoon Salt

1/2 Teaspoon Cinnamon

1/8 Teaspoon Allspice

1 Cup Shortening

1/2 Cup Granulated Sugar

1/2 Cup Packed Brown Sugar

2 Eggs

2 Cups Rolled Oats

1/3 Cup Orange Juice

1 Cup Raisins

1/2 Cup Chopped Nuts

2 Teaspoons Grated Orange Rind


Sift flour with baking soda, salt and spices three times. Cream shortening until smooth and soft. Add both sugars gradually and beat well. Add eggs one at a time and beat until very light. Stir in oats. Add flour mixture and orange juice alternately in several portions. Stir in raisins, nuts and rind. Drop by teaspoons onto greased baking sheets. Bake in a 350 degree oven for 10 to 12 minutes.
