Not The Best Coffee Cake

We have family visiting from out of town. Whenever we have house guests I like to have something yummy available for breakfast. That way they can eat when they want and I don’t have to prepare a huge meal every morning.



I thought this coffee cake would be a good option as it had some fruit in it.





Well, the coffee cake made up quite well - the batter produced a moist and soft cake. So that part was good.




The apples did not soften as much as I would have liked. They had some crispness to them. I would have preferred a soft apple in the cake.




The cake itself, while moist, was lacking in sugar. It had a more savory element to it.




The streusel was also lacking in the sugary element. It was more a cinnamon crust.



Overall, this was a disappointing coffee cake. I was a little embarrassed to serve it. Our guests had heard of an amazing coffee cake I had made for someone else. I ended up making the other coffee cake as well - the Orange Marmalade Coffee Cake - and everyone ate that one. . .



QUICK APPLE STREUSEL COFFEE CAKE

1 1/2 Cups Flour

2 1/4 Teaspoons Baking Powder

1/2 Cup Sugar

1/2 Teaspoon Salt

1/2 Teaspoon Cinnamon

1 Egg

1/2 Cup Milk

1/4 Cup Melted Shortening

1 1/2 Cups Chopped Tart Apples

STREUSEL TOPPING

1/4 Cup Sugar

2 Tablespoons Flour

1 Tablespoon Soft Butter

1/2 Teaspoon Cinnamon



Sift flour, baking powder, sugar, salt and cinnamon together three times. Beat the egg. Add milk and melted shortening. Pour all at once into dry ingredients. Add the chopped apple and mix well. Turn into a well greased 8 inch square baking pan. Mix together topping ingredients and sprinkle over top. Bake in a 400 degree oven for 30 minutes.
