Not The Best

My daughter loves meat loaf. I grew up with a mother who made meat loaf equal to bricks. So, I don’t always love it. But, I am always willing to try to give my daughter food she loves.



This was one of her picks. It sounded strange to me, but what the heck. . .



It certainly is strange. The pineapple and pimiento give the meat a sweetness that just didn’t seem to go well together.




The bacon makes the meat loaf super moist, so that was one thing the recipe had going for it. As the bacon cooks, the grease soaks throughout the pan. You will definitely need to drain the meatloaf before serving.





We just couldn’t get past the weird sweetness. Or at least I couldn’t.



Don’t get me wrong. The meat loaf is edible. It’s just strange.



PINEAPPLE MEAT LOAF

6 Slices Bacon

2 Pounds Hamburger

1 Egg, Beaten

1 Pimiento, Chopped

2 Teaspoons Salt

3/4 Cup Crushed Pineapple with Juice

1 Cup Bread Crumbs


Place 3 slices of bacon in the bottom of a loaf pan. Combine remaining ingredients and shape on top of bacon. Place three more slices of bacon on top. Bake in a 350 degree oven for 1 1/2 hours.
